Sweeeeet Pork

Finally the weather has cooled a bit ... cooled enough to slaughter a hog. She was farrowed in Feb and was probably 275+ lbs. Since the end of July she has been on a diet of milk, grain, watermelon, pears, greens, and hay, and did I say milk every day?

Last night we had a crown roast (from the loin where the chops come from). It was the sweetest pork I have ever tasted. It was the milk, I am convinced.
